I'm more interested in the paragraph about gilding birds. :) The food historian they mention is one of the chiefs at the Hampton Court kitchens.

Actually, that was a (relatively) common medieval feast showpiece. I don't recall reading any instances of an animal larger than a steer being at the outside of the progression, but goat => sheep => boar => deer => steer was indeed done.
