I've also seen this done with prosciutto instead of bacon (the prosciutto forms a cup to hold the egg, instead of putting smaller bacon pieces on the bottom of the muffin cup). Either way, they are divine.

I make something like these only I do it a bit differently. Use a glass that touches the edges of the bread to cut out circles. Moosh the circles. Heavily butter a muffin pan and the bread circles. Butter side down, smoosh the bread circles into the muffin cup. Lightly cook bacon. I use about a half a slice per cup. Chop it up. I use about 1 egg per cup so pull those out. Whisk them with some milk in a bowl. Fill the cups about 3/4 of the way, sprinkle in some bacon, and this is where it gets interesting.

Add your mix in's. Some get ham and cheese. Some get herbs, garlic and cheese, others get whatever I can come up with. Bake at 350 for about 30 min or until toothpick comes out clean. You will want to make at least 2 dozen because they go fast.
