Thanks and a question

karlita, for gifting us with a gorgeous and much needed salad caddy set (probably not the right term -- a combination of a salt shaker, pepper shaker, vinegar dispenser, and oil dispenser, along with round caddy to hold them).
Now that we have it, I've got a question. Can and should vinegar be stored in the holders? This is a typical restaurant/salad bar style dispenser, open at the top. With oil, my inclination is to use it only when I'm planning on eating salad that night (as I'd imagine oil left out will get rancid quickly). With vinegar, I'm not as certain. Anyone know?
