Had a nice relaxing day so far (unlike yesterday, when I woke up with about five minutes to spare to get Elayna to Karate). Made coffee and biscuits, had some more pie, relaxed for a while.

Also gave Elayna her first taste of key lime pie. I only let her have a bite, as her milk allergies, although not severe enough to be bothered by one bite, aren't worth risking a whole slice on. But, much to my surprise, she loved it! Since this pie was a bit on the tart side (I doubled the amount of key lime juice the recipe called for, amongst other changes -- I'll post the revised recipe here soon), I really didn't expect her to like it at all, but she really liked it! Given her historically bland patterns (not helped by never really being around folks who liked interesting foods while she was a toddler), I was very pleasantly surprised. Now, does anyone know of a dairy-free recipe for key lime pie? And one that's edible.

Afterwards, Elayna and [livejournal.com profile] shadesong played 1313 Dead End Drive, and then [livejournal.com profile] shadesong and [livejournal.com profile] anexstacy went out for shoes, while Elayna and I played Wingnuts (the niftiest update of Time Pilot/1942 ever) on my Mac (she watched the radar screen for me). After an hour of that and some serious hand cramps for me, we took a break for lunch, and now it's just a hanging out afternoon. It's a good day. :-)

Lime tofu cheesecake?

Now, does anyone know of a dairy-free recipe for key lime pie? And one that's edible.

Can't speak for it being edible, since I haven't tried it this way, but what about possibly a cheesecake-pie variant? I know the standard recipe works well; I've made it many times, topping it with cherry pie filling. It would probably make a decent answer to key lime pie as well...

# 1 graham cracker pie crust
# 8 oz. cream cheese, softened (Silken tofu?)
# 1 can sweetened condensed milk
# 1/3 cup lemon juice (Swap lime here)
# 1 tsp. vanilla

Directions
1. Whip cream cheese, add condensed milk and beat until well blended.
2. Add lemon juice and vanilla. Blend well.
3. Pour into pie crust and chill for 3-4 hours.

Here's what I found for sweetened condensed soymilk. Haven't personally tried it.

* 1 cup instant soy milk powder
* 2/3 cup white sugar
* 3 T margarine
* 1/3 cup boiling water

Mix the soy milk powder and sugar in a bowl. Melt the margarine into the water. Add the wet ingredients to the dry and beat with an electric mixer 2 minutes. Refrigerate overnight. Keeps 1 week refrigerated. Makes the equivalent of 1 can of sweetened condensed milk. This can replace sweetened condensed milk in any recipe and it works amazingly! Don't forget to make it at least the night before it's needed.

You might be able to use silken tofu as the condensed milk substitute, although you'd have to play with proportions of it and sugar.

What is she allergic to in milk? Because some people can tolerate canned (cooked) milk when they can't the carton or cheese varieties.

There's powder soy milk?? Well, I'll be.

I just use the vanilla flavored soy milk in everything... even Mac and Cheese. Tastes a bit funny but in a good way..

Yeah, it comes in canisters. I've found it in health food shops and places like GNC.
