The Edge Brownie Pan:



The little Alton Brown on my shoulder is screaming, "it's a unitasker," while the brownie-lover on my right shoulder is noting that I might make cereal bars and cornbread in it, just like the description says.

Dammit. Now I want some brownies.

Also, reading the description, who the fuck uses brownie mixes? I mean, brownies are about one notch above grilled cheese sandwiches on the "easy to make" scale.

I do make my own brownies usually, but I have to admit that Ghiradelli's brownie mix is really, really good. For something that just takes a little water, a little oil and an egg, it's fantastic.

hey I'm a former baker and I've been known to use brownie mix. Because I hate having all those bowls messed up. Bowl for melted chocolate, bowl for dry stuff, bowl for wet stuff, three gorram spatulas and BLAH!!

Well there's also the fact that I'm not a HUGE brownie fan like some folk. Mix, homemade, it all is the same to me.

I've got a one-bowl brownie recipe. I melt the chocolate and add all the other things in one glass bowl. If my microwave was bigger, I might even consider using my glass 9"x9" pan and making it all in the pan.

As for mixes... I'm impatient. :D It's all my husband can do to stop me from eating them before they cool. I'd probably kill him if he tried making them from scratch. :D

When making fudgy brownies, I have never in my life used a brownie mix. Of course, this is coming from someone who won't allow Hamburger Helper into her kitchen either.

I will cop to using a cake mix for my caramel brownies though. The recipe calls for German Chocolate Cake mix with pudding in the mix, and since the results are perfection, I don't want to mess with it. Plus, I can practically make that recipe in my sleep, so it's my go-to when I need to make a dessert to pass.

Cut the cheese too thick. The edges get all nice and melty, but the center stays solid, so the oil runs down inside as the bread is toasted. You bite in and the texture goes from stringy cheese to chunky half-melted crud.

Pan too hot, so they scorch the outside while the inside stays unmelted.

But then, I also knew someone who successfully burned water. We bought her a microwave when she moved out of her mom's place.

Ah- OK, That makes sense. I guess I was thinking more about ingredients rather than technique.

One of the frustrating things about grilled cheese it that it has to cook very slowly- at least, with the amount and kind of cheese I tend to use (very sharp cheddar).

I hadn't thought about it either - Lasagna is one of those things that (to me, anyway) is a lot of work for very little return, but when I stopped to think about it, I do like the edges best, because I like crispy overcooked cheese. So it makes sense.

dude, when you are baked out of your mind, minimal measuring and clear easy to follow directions (with pictures) are highly preferable
