According to Mayberry Melonpool (http://www.melonpool.com/), he fell into a void between comic strips along with other "missing" strip characters.

According to ... well ... they have a rather darker take in highly questionable taste. But then, everything about Deep Fried is in highly questionable taste. (http://www.whatisdeepfried.com/)

Odie's original owner!

I always thought it was rather nasty of Jon to evict Lyman and keep his dog.

Well, when they broke up, Lyman moved home with his parents, and couldn't take Odie.

I remember reading somewhere that Jim Davis says that Lyman left the strip because too many people wondered if he and Jon were a couple.

He left to go find himself. Turned out he was in the Gobi Desert the whole time.

He wandered to a place primarily defined by people wondering where he went. It's sort of recursive, but he gets by.

Two tongue-in-cheek explanations offered by Jim Davis:

1) Buried under the floorboards.

2) Wandered off to explore different strips. After a brief fling with Cathy, was never seen again.

my real question, since i missed the start of it, is why jon and liz are now a couple? i thought the point of the comic was that single men who own cats are crazy and cant get dates with successful women, thanks to their own failings

The same way that Cathy managed to get married.
