The only reason I can fathom that she wouldn't be cast as Rachel's mother would be if the writers' table has no intention whatsoever of ever showing us Rachel's dads.
Not necessarily. Sure, the fans want her as Rachel's mom, but the writers likely have this season's arc planned out; I suspect that they'd rather give Idina a meaty multi-episode part, and this is one that would suit her. That doesn't rule out giving us Rachel's dads (or her mom).
If she does get on the show, you can celebrate with a postcard of a bacon Christmas tree. Course, you don't need a reason to celebrate with a bacon Christmas tree...
