So, I went to lunch with co-worker yesterday, and snagged his mayo packs for my cheeseburger. After eating it (sans bun, of course), I was flipping the mayo pack through my hands, and noticed that the ingredient list included "high-fructose corn syrup."

WTF?

Why the hell would mayo have that? And any idea how much could be in the mayo? I'm hoping it was minimal, but I'm just amazed. I know that the sugar in some jars of mayo isn't enough to affect blood sugar, but I know that corn syrup is a lot denser. And since I'd had a salad at lunch, I'd already used up my carbs for the day.

Something to note. You can discount fiber carb grams from your daily carb intake.

How much carbohydrate you can eat and remain ketotic is a personal thing. If you're not testing, start - then you can stop fretting and just get accustomed to the way your own body works. I can eat quite a lot of carbs and remain significantly ketotic, but my dad barely gets ketotic on no carbs at all.

(this is assuming you're trying to be ketotic - if not I apologise for the confusion)

If you couldn't taste the sugar, then I'd say the content was pretty minimal.
If it's a branded mayonnaise, I can check the exact carb content when I get home.

And yes, fiber carbs don't count, because you don't really digest them. Vegetables tend to have a lot of their carbs as fiber instead of sugars/starches.

Other non-sweet things have sugar or corn syrup in them; ketchup, for example. It wouldn's surprise me to find it in mayo.

Almost everything these days has corn syrup in it. You have to read every label. Condiments, cereal, sauces, dressings, almost every snack food, sweet or savory . . . it's ridiculous.

We don't realize how sweetened things are now. I wouldn't use 'does it taste sweet' as a barometer unless you've been avoiding sweet food attentively for a few weeks. Your palate has to reset completely, and then you'll be irritated at how even meat and vegetables are typically sweetened. :P

I second this -- I make my own mayonaise, and was ASTOUNDED at how bitter it tasted, at first....

Then, I added a little honey, and suddenly it tasted more familiar. I've weaned the sugar back out, but I had no idea how much could be in there!

High fructose corn syrup is the *DEVIL*... It's a frankenfood as far as I'm concerned. They put it in EVERYTHING here. It's horrifying.
