Jason loves the stuff.

Having made my own real sausage before, I just keep trying to figure out ways to make my own veggie sausage, so that it tastes like....you know.....Sausage.

No. really. It really has been something I'm trying to work on.

the problem is that sausage, besides the spices, is meat protein and fat. Now, the only really good veggie fat I know of is Avocado, so if you mix that with some protein substitute, and some spices....

Tofu, maybe. Which is something else I've been meaning to make.

What about grains? How would something like lentils hold up, or rice?

Steel-cut oats. Brown rice. Both cooked. Bread crumbs would make good binders, as well. Tofu, silken firm would probably yield the best results. You might try baked tofu, as that would have more water removed and might be better for sausage making. You can use the gelatin casings, too, which I *think* are vegetarian-safe. If you're making breakfast sausage, then you wouldn't need the casings. You might also try using some seitan in the mix for a good texture variance.

Actually, gelatin casings are *not* vegetarian friendly, considering that gelatin is made from bone marrow.

I had a friend who loved to taunt our vegetarian friends.. He'd get veggie hot dogs (they tasted better than the regular ones) and have them with meat chili (not the veggie chili that was also available).
