They're making a PS3/XB360 game out of Dexter
.
I love the show, but I just don't see it working very well.

Do games off of TV Shows/Movies ever work well?

Some do. The Stars Wars games come screamingly to mind.

You're right. That series slipped my mind, but may be the exception that proves the rule. Can you give me 5 more?

Spider-Man/Spidey 2.
Shrek 2.
The Chronicles of Riddick.
Goldeneye.
And that's all I've got. I've heard good things about Godfather, though.

The Simpson's and Goldeneye I forgot as well. I remember Bart vs the Space Mutants.
The rest, I notice are relatively new. And I'll admit my experience is more on older games. I've only had limited game time in the post PS1/N64 era.
Maybe they've actually gotten better about them. I just tend to remember absolute bombs in the late 80s through 90s.
Although, you mention Star Trek above, every ST game I played was absolutely horrible.
I know...~turns in more of his geek points for his lack of recent game knowledge~

Why do I see having to cut up the body and dispose of it correctly for the win?

Bzah? I'm almost scared to find out how they're going to go about that.
