I mentioned that I'd post the recipe, since it no longer resembles the recipe I started with:



 Ingredients
  
4 egg yolks, beaten

2 (14 ounce) can sweetened condensed milk (I used Eagle)

1 cup key lime juice (I used Nellie and Joe's).

1 extra-large (10 inch) graham cracker crust.


 Directions

Preheat oven to 375 degrees F (190 degrees C).

Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into graham cracker shell.

Bake in preheated oven for 15 minutes. Allow to cool for about ten minutes, then store in fridge. Whip some cream while it's cooling (using Reddi-Whip is blasphemy, of course).

Warning: This pie is VERY tart (even with the two cans of condensed milk). That's how it should be.

I wasn't worried about health reasons, I just never buy eggs unless I need them for something like this. We just don't use them. Guess I can get a six-pack tho. And make choc chip cookies with the other two. ;)

I do believe I'll make this for the hubby for v-day. That would surprise him nicely. :) Thanks!

Egg Beaters in Key Lime Pie

They work great! I was very surprised and satisfied with the outcome as Key Lime Pie is one of my favorite sweets. I used 1/2 cup lime juice, the zest of one lime, 1 cup egg beaters, and 1 can fat-free sweetened condensed milk, and baked it in a pre-made reduced-fat graham cracker crust. I baked it at 350 deg. for 15 min.

You don't know me, but I found this journal entry when I Googled 'Egg Beaters Pumpkin Pie'.

I always use key lime juice out of a bottle, but many cookbooks written by chefs note that they just use regular ol'Persian lime juice because key lime juice isn't always available. I have not tried it that way.

Today I am going to try a egg beaters pumpkin pie for my cholesterol-challenged husband. Whole Foods makes great frozen pie crusts that are vegan and contain no trans-fats.

Whip some cream while it's cooling (using Reddi-Whip is blasphemy, of course).

Of course using Reddi-whip is blasphemy. Using Cool Whip even moreso.

Do you add anything when you whip cream? I usually toss in a glug of vanilla and a pinch of sugar right before I kick the beater up from Blend to Whip.

But...Whipped Cream? When you have those four lovely egg whites just screaming to become a meringue? ::tsk:: Personally, I think I'd put them to good use --with that same glug of vanilla and pinch of sugar.

Where did you get this recipe? I have one similar, a no bake one. This one is probably better though, I shall try it soon. Also, ever try oreo cookie crust instead of Graham Cracker?

You cooking-capable people make me envious. If anybody'd witnessed my instant tapioca disaster of two nights ago I'd never live it down. Key lime pie (even one this simple!) might just rise up and eat me instead.... (The tapioca tried. Not sure I want to give anything fiercer the chance.)
