Douglas Adams Three Bean Salad
Jun. 2nd, 2003 12:50 pmSince a few more folks have asked. I'm embarrassed to call this a "recipe," though.
Ingredients:
1 Can of Green Beans (drained)
1 Can of Wax Beans (drained)
1 Can of Lima Beans (drained)
1 Can of Kidney Beans (drained and rinsed)
1 Can of Chick Peas (drained)
1 Can of Ro-Tel tomatoes and chiles (the can marked "Original"), drained slightly.
1/3 cup of White Vinegar
1/3 cup of Apple Cider Vinegar
1/3 cup vegetable oil
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon pepper
No Tea.
Directions:
Mix everything together. Put in refrigerator for at least twelve hours. Eat. Serves one person a few times.
Variations: Use any other beans you like. I like this combo because you get the color variations (light garbanzos, lima, and wax beans, green beans, and red kidneys), as well as shape and texture variations (round, oval, long, short, etc). But Black Beans work well. Also, if you have onions or pickled garlic around (I didn't, alas), go for it!
